What it is

Raw, finely diced tomato, onion and pepper dressed with oil and vinegar, left to sit so the vegetables release liquid. Served alongside grilled meat and sausage.

Traditional tomato

Not identifiable to a named cultivar. Firm, fleshy tomatoes that dice cleanly are what the dish requires.

Origins

Part of the Argentine asado table. The tomato reached South America's cooking through long domestication in its native range — the species originates in western South America and was domesticated in Mesoamerica before returning across the Atlantic.
